Iniziate pulendo le verdure. Le cime vanno lavate per bene e private dei gambi più coriacei e delle foglie rovinate, poi spezzettatele più o meno della stessa dimensione mantenendo le cimette intere.
Turnip tops with sausage is a second rustic dish which is very common in traditional Lucan cuisine; It is a really simple recipe, prepared in a pan with a few steps, but with an exquisite flavour to the palate thanks to its rich ingredients.
This is a unique and complete dish thanks to the turnip tops, winter vegetables rich in beneficial properties: mineral salts, vitamins and antioxidant factors; so the combination of flavours with the sausage is perfect. For this reason I wanted to choose a good and genuine fresh sausage of Salumi Emmedue, which is ideal in many preparations and cooking.
INGREDIENTS FOR 4 PEOPLE:
4 Salumi Emmedue sausages
1 kg turnip tops
2 cloves of garlic
3/4 tablespoons of extra virgin olive oil
To prepare the turnip tops with sausage we start by cleaning the vegetables, the turnip tops should be washed thoroughly and deprived of the most coriaceous stalks and the damaged leaves, then cut them more or less at the same size keeping the tops safe.
At this point put the tops for 5 minutes in boiling salted water, then drain well.
Pour into a large pan, put the oil together with garlic and let them to brown well, then add the whole sausages or cutted into pieces previously pricked.
Cook for about 5 minutes turning them occasionally and add the turnip tops, cover the pan and continue cooking over medium heat for about half an hour.
During cooking the Turnip tops will not dry out because they will release part of their water.
Serve hot and accompany them with a good glass of full-bodied red wine.
